Tangy Grilled Veggies Pasta Salad

Ingredients

  • Vinaigrette
  • 1 clove grated garlic
  • 2 tablespoons red wine vinegar
  • 2 tablespoons balsamic vinegar (sub apple cider vinegar if needed)
  • 1/2 cup olive oil
  • 1/2 cup mixed herbs (I like parsley, dill, basil or a mix of all three)
  • kosher salt and freshly ground black pepper
  • Pasta Salad
  • 1 pound short pasta (I like farfalle)
  • 4 cups mixed grilled vegetables (such as asparagus, corn, bell peppers, eggplant, zucchini, onions and tomatoes), chopped
  • 1 cup Kalamata olives (or sub green olives)
  • 1 (8-ounce) block feta, crumbled (if desired)
