Ingredients

  • 340 grams cooked skinless chicken breast, shredded (about 3 cups)
  • 2 teaspoons olive oil
  • 3/4 teaspoon sea salt
  • 1/2 teaspoon cumin
  • Pinch paprika
  • 1/2 cup plain low fat Greek yogurt
  • 1 tablespoon lemon juice
  • 1 tablespoon tahini (sesame seed paste)
  • 1 teaspoon minced garlic
  • 240gr precooked farro or spelt
  • 2 cups chopped cucumber
  • 2 cups cherry tomatoes
  • 1 large tim unsalted chickpeas, rinsed and drained
  • 2 tablespoons chopped fresh parsley
  • Freshly ground black pepper
