Preheat your oven to 200°C fan forced. Peel your potatoes, then slice off the tops and bottoms followed by the sides to create flat edges. Slice down lengthways to create 3-4 even thick pieces. Make sure you save all the little offcuts to roast or cook later so you don't waste any!
2. Place between a pair of wooden chopsticks and slice vertically. Flip then slice diagonally. Repeat with all the potato slices then place onto a lined baking tray.
3. In a small bowl, mix together the olive oil, salt, pepper, paprika, garlic powder, onion powder, oregano and rosemary.
4. Brush oil mixture over the potatoes to evenly coat each slice then bake in the oven for 30 minutes or until side facing up is golden. Flip and bake for another 20 minutes or as long as you need until golden and crispy.
5. Transfer to a plate and garnish with fresh parsley.
