Acorn Squash Parmesan Fries

Ingredients

  • 1 acorn squash
  • 2 Tbs olive oil
  • 1/2 Tbs smoked paprika
  • 1/2 Tbs onion powder
  • 1/2 Tbs oregano
  • Salt
  • Pepper
  • Parmesan cheese

Directions

  1. Preheat oven to 425.
  2. Cut acorn squash down the middle. Remove the insides. Then cut them into fry shapes.
  3. In a bowl mix together the olive oil & seasonings. Add the acorn squash & toss everything together to coat.
  4. Finely shred Parmesan cheese.
  5. Coat the acorn squash with Parmesan cheese on both sides.
  6. Lay them onto parchment lined baking sheet and bake for 20 minutes. Remove from the oven and flip the pieces. Put back in the oven or change to broil for 2 more minutes.
