Put the Cornflakes in a plastic bag and use a rolling pin or a cup to crush them and roll until they are a breadcrumb consistency.
Put the crushed Cornflakes, salt, and pepper in a bowl and mix together.
Crack the egg in a separate bowl and beat with a fork.
Put each piece of chicken into the egg and then into the Cornflakes, pressing so the Cornflakes stick and are well coated. Place the chicken into the air fryer basket.
Spray the chicken with non stick cooking spray. Set the air fryer to 400 degrees for 14 to 15 minutes.
Serve with dipping sauces if desired.
