Air Fryer - Maple glazed roasted vegetables with pesto and spiced nuts

Ingredients

  • For the vegetables
  • 500 g carrots, sliced lengthways then into diagonal chunks (or so evenly sized)
  • 500 g parsnips, sliced lengthways then into diagonal chunks (or so evenly sized)
  • 200 g brussels sprouts
  • 1 red onion
  • 2 cloves of garlic, minced
  • 4 tbsp maple syrup
  • 1 tbsp wholegrain mustard
  • 150 g mixed nuts
  • 2 tbsp olive oil
  • 1 sprig fresh rosemary,
  • 1 tsp cayenne
  • For the pesto
  • 50 g fresh basil leaves
  • 2 cloves of garlic, crushed
  • 25 g pine nuts
  • 40 parmesan, grated
  • 4 tbsp olive oil
