Preheat your air fryer to 375°F (190°C).
In a small pan, sauté spinach, sun-dried tomatoes, feta cheese, and minced garlic in olive oil until the spinach wilts and the ingredients are well combined. Set aside to cool.
Butterfly the chicken breasts by slicing them horizontally, but not all the way through, so you can open them like a book.
Season the inside of each chicken breast with salt and pepper.
Spoon the cooled spinach mixture onto one side of each chicken breast.
Close the chicken breasts, securing them with toothpicks if needed.
Brush the outside of each chicken breast with olive oil.
Place the stuffed chicken breasts in the air fryer basket in a single layer.
Air fry at 375°F for about 18-22 minutes, flipping halfway through the cooking time, or until the internal temperature reaches 165°F (74°C).
Let the stuffed chicken breasts rest for a few minutes before slicing.
