Alaska Burger Buns

Ingredients

  • 1 Batch / 2 Batches
  • 170g/340g 90º-100º Water
  • 10g/20g Look At Note 4 Ration Instant Yeast
  • 50g/100g Sugar
  • 430g/860g Unbleached All-Purpose Flour
  • 28g/56g Butter, at room temperature
  • 1/2 Large egg
  • 8g/16g Salt
  • TOPPING
  • 43g melted butter

Directions

  1. 1. Combine Water, Yeast, and Sugar. Let sit 10 mins or until yeast starts to bubble.
  2. 2. Add all remaining ingredients except melted butter to KitchenAid Bowl.
  3. 3. Add Yeast Mixture to KitchenAid Bowl.
  4. 4. Using Dough Hook, "Knead" on #2 for 8 minutes.
  5. 5. Put dough in a large bowl lightly coated in oil and place kitchen towel on top. Place in a warm area for 45-60 minutes or until doubled in size.
  6. 6. Divide dough into 60 gram balls flatten into 3" Round "Plates" on silicone lined baking sheet.
  7. 7. Pre-Heat Oven to 375º
  8. 8. Return to Warm area to proof for 45-60 minutes or until puffy.
  9. 9. Melt Butter and lightly brush before placing buns in the oven.
  10. 10. Bake for 8 mins then rotate. Bake for additional 7 mins.
  11. 11. After 15 mins, remove from oven and coat lightly with butter.
  12. 12. Place on cooling rack.
  13. 13. Put in Ziplock once cool and place in freezer to enjoy later.
