Almond Breakfast Cookies

Ingredients

  • 1/4 cup mashed banana (1/2 banana)
  • 1 egg
  • 2 Tbsp pressed pitted dates
  • 1/2 cup almond butter
  • 1/2 cup almond flour
  • 1/8 tsp sea salt
  • 3/4 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/2 cup raisins
  • 1/2 cup chopped walnuts

Directions

  1. Preheat oven to 350'F. Line cookie sheets with parchment paper.
  2. Mash bananas, add egg, and dates.
  3. Add almond butter, almond flour, cinnamon, salt and baking powder.
  4. Stir in raisins and walnuts.
  5. Spoon batter onto lined cookie sheet. Bake 12 minutes.
