Almond Crusted Chicken

Ingredients

  • 2 chicken breasts
  • 1 large egg
  • 1/4 cup ground almonds
  • 1/2 tbsp garlic powder
  • 1/2 tbsp dried oregano
  • 1/2 tbsp dried thyme

Directions

  1. Pre-heat the oven to gas mark 5/375f.
  2. In a small bowl, whisk the egg and set to one side.
  3. On a large plate, mix together the ground almonds, garlic powder and dried herbs. Season well with salt and pepper.
  4. Dip the chicken breasts into the egg and then press both sides of the chicken into the ground almond mix.
  5. Heat some oil in a large frying pan until it's hot.
  6. Place the coated chicken breasts into the pan and leave for 3-4 minutes to seal and brown on one side. Turn over and repeat on the other side.
  7. Transfer the chicken breasts to a baking tray and cook for a further 15-20 minutes in the oven.
