Wash the apples, peel, remove the core and cut the flesh into cubes, sprinkle with a little lemon juice.
Cream the butter with the sugar, then mix in the eggs one at a time.
Mix flour with cinnamon and baking powder and stir into the egg mixture.
Stir in the apples and nuts
Place paper liners into jumbo muffin cups
Spray liners with canola oil cooking spray.
Bake at 350°F for 45 minutes until golden brown, and a toothpick inserted comes out clean.
Let the muffins cool down
Dust with icing sugar just before serving.
