Arroz Con Pollo

Ingredients

  • marinade—
  • 1/4 cup fresh orange juice (about one orange)
  • 2 tablespoons fresh lime juice
  • 2 garlic cloves, minced
  • 1 tsp salt
  • 1 tbsp canola oil
  • for chicken and rice—
  • 1 whole 4 – 4 1/2 lb chicken
  • 1 tbsp + 1 tsp olive oil, divided
  • 2 pints cherry tomatoes
  • 2 green bell peppers, diced
  • 2 cups diced yellow onions (about 1 1/2 small onions or 1 large onion)
  • 1 cup canned diced tomatoes
  • 2 garlic cloves
  • 1/3 cup pimento stuffed green olives, roughly chopped
  • 1/2 cup green peas
  • 2 tsp cumin
  • 1 tsp paprika
  • 1/4 tsp saffron, crushed
  • 1 bay leaf
  • 1.5 tsp salt
  • 1/4 tsp pepper
  • 2 cups white rice, uncooked
  • 3 cups chicken broth
  • hot sauce for serving
