Asparagus Salad

Ingredients

  • 10 asparagus stalks, ends trimmed and diced
  • 1 cup cooked cannellini beans
  • 1⁄2 cucumber, sliced thin and cut in half
  • 1⁄2 cup sliced cherry tomatoes
  • 1⁄2 green bell pepper, diced
  • 1⁄4 red onion, diced
  • 3 radishes, sliced thin and cut in half
  • 1⁄4 cup goat feta cheese (optional) (vegan: omit)
  • sea salt and fresh ground pepper, to taste
  • Dressing:
  • 1⁄4 cup extra virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon maple syrup or raw honey 1⁄4 teaspoon dried thyme
  • sea salt and fresh ground pepper

Directions

  1. Place all of the salad ingredients in a bowl.
  2. To make the dressing, whisk together all of the ingredients.
  3. Pour over the salad ingredients and let sit for at least 15 minutes or more to marinate.
  4. Enjoy!
