Aunt Jeannine’s Salad

Ingredients

  • 1 or 2 heads of romaine lettuce, chopped
  • 4-6 plum tomatoes seeded and chopped
  • 1 green pepper chopped
  • 4 oz. dried Italian salami
  • 1 cup chick peas
  • 4.5 oz. shredded mozzarella ( or more)
  • 1/2 cup sliced black olives
  • 1/2 cup pimento stuffed green olives
  • 3 Tablespoons red wine vinegar
  • 1.5 teaspoons
  • 1 teaspoon
  • Dressing
  • 3/4 cup good olive oil
  • 1.5 Tablespoons fresh basil chopped or 1 teaspoon dried basil
  • 1 Tablespoon dijon mustard
  • 2 teaspoons lemon juice
  • pinch of sugar
  • Salt and pepper to taste
