Ingredients

  • FOR THE SALAD:
  • 95g Tuna in spring water
  • 1/2 cup chickpeas, drained
  • 1/4 Avocado, peeled and pitted
  • 1 large tomatoes, cut into wedges
  • 0.5 large cucumber, halved lengthways and sliced
  • 0.25 of a red onion, sliced thinly
  • 2 cups mixed salad greens
  • FOR THE DRESSING:
  • 0.13 cup olive oil
  • 1 tablespoons fresh squeezed lemon juice
  • 0.5 tablespoon fresh chopped parsley (plus extra to serve)
  • 0.5 teaspoon minced garlic (or 1 large garlic cloves, minced)
  • 0.13 teaspoon salt
