  • 2 cups roughly chopped fresh Napa cabbage
  • 1/2 teaspoon kosher salt
  • 4 ounces bacon, roughly chopped
  • 4 ounces fatty ground pork
  • 1/4-inch disk fresh ginger, roughly chopped
  • 1 teaspoon soy sauce
  • 2 teaspoons sugar
  • 2 teaspoons toasted sesame oil
  • 1 tablespoon Shaoxing wine or dry sherry
  • To Serve:
  • 2 tablespoons soy sauce
  • 2 tablespoons Chinkiang vinegar (or rice vinegar)
  • 1 teaspoon sugar
  • 1 teaspoon finely minced ginger
  • Vegetable oil for frying
