Bacon Jam

Ingredients

  • 3/4 cups of Bacon Grease
  • 4 lbs of Bacon Bits
  • 8 Yellow Onions (small diced)
  • 1 lb of Minced Shallots
  • 1/2 cup of Minced Garlic
  • 4 cups of Brown Sugar
  • 2 cups of Maple Syrup
  • 3 cups of Apple Cider Vinegar
  • 1/4 cup of Chili Powder

Directions

Add Bacon Grease & Bacon Bits to a wide, shallow pan and place over a medium flame. Allow Bacon to completely render and become almost crispy.
Add Diced Onions, Minced Shallots and Minced Garlic to the pan. Cook until Onions are translucent.
In a medium sized mixing bowl, add: Brown Sugar, Maple Syrup, Apple Cider Vinegar & Chili Powder. Mix until well combined.
Slowly pour Sugar Mixture into the pan, be careful of the splatter from the Bacon Grease.
Reduce heat to a low-medium and let simmer for 30-45 minutes. STIR OFTEN.
The end consistency should be a loose jam, when this is reached; pan into a two inch full pan.
Label, date & place in walk-in to cool.
