Bacon Wrapped Dates

Ingredients

  • 1 lb. bacon
  • 8oz. Pitted dates
  • 1-2 garlic cloves
  • 1/2 large red pepper (seeded/quartered)
  • 1/2 medium yellow onion
  • 1/4c. Half and half cream
  • 1-2 tbsp EVOO
  • 1/8 tsp. Salt
  • Gorgonzola cheese

Directions

  1. Soak toothpicks for 15 mins.
  2. Cut bacon in half.
  3. Bake garlic cloves on baking sheet for 15 mins.
  4. Stuff dates with Gorgonzola cheese.
  5. Wrap bacon around dates and hold in place with toothpick.
  6. Rub pepper and onion with EVOO.
  7. Place pepper and onion on sheet and bake for 15 mins. Bake until tender and roasted.
  8. Squeeze garlic out of its paper into a food processor with the roasted pepper and onion.
  9. Blend until smooth. Add olive oil until blended.
  10. Add salt.
  11. Slowly add half and half until creamy while blending.
  12. Serve immediately or cover and refrigerate until ready to serve. Warm back up in microwave.
  13. Place dates on cookie sheet. Bake 15 mins. Turn over and bake another 10-15 mins.
