Preheat the oven to 350 F and chop the potatoes into fry size pieces and place in a large bowl.
In a smaller bowl mix the oil and salt. (The salt will mostly sink to the bottom and try to scoop out a little). Add in the pepper and spice.
Pour in just enough of the liquid to coat the potatoes well with your hands.
Spread it evenly on a large baking tray lined with parchment paper and cook for forty minutes stopping at thirty to move them around. Take out to cool and enjoy!
