  • 3 Brussels sprouts, trimmed and halved
  • 1/2 cup chopped broccoli florets
  • 1 small zucchini, sliced
  • 120 grams salmon fillet
  • 1 tsp olive oil
  • 1/2 lemon, juiced
  • Salt and pepper
  • 1 tsp chopped fresh parsley

Directions

  1. Preheat the oven to 180C. Line a baking tray.
  2. Assemble the vegetables on the baking tray around the salmon, drizzle with olive oil, and bake for 15-18 minutes or until the salmon is baked to your liking.
  3. Transfer to a plate, add lemon juice, season to taste, and top with parsley.
