Baked Salmon and Greens - Pg 71

Ingredients
- 3 Brussels sprouts, trimmed and halved
- 1/2 cup chopped broccoli florets
- 1 small zucchini, sliced
- 120 grams salmon fillet
- 1 tsp olive oil
- 1/2 lemon, juiced
- Salt and pepper
- 1 tsp chopped fresh parsley
Directions
Preheat the oven to 180C. Line a baking tray.
Assemble the vegetables on the baking tray around the salmon, drizzle with olive oil, and bake for 15-18 minutes or until the salmon is baked to your liking.
Transfer to a plate, add lemon juice, season to taste, and top with parsley.
