Baked Tomato Beans on Toast

Ingredients

  • 1 tsp olive oil
  • 5 cherry tomatoes
  • 1/3 onion
  • 1 tbsp fresh parsley, chopped
  • 2 slices bread
  • 1 cup mushroom
  • 1 tsp coriander, chopped
  • 1/4 bell pepper
  • 1 tsp chilli sauce
  • 1/2 cup canned beans

Directions

  1. Preheat olive oil in a skillet, add the onion and fry until golden. Stir in the mushrooms and cook until they turn golden-brown.
  2. Slowly mix in the chopped peppers and cherry tomatoes. Sauté for a few minutes.
  3. Stir in the beans and add some chilli sauce. Sauté for a few more minutes.
  4. Toast the bread. Serve the beans on top of the toast, sprinkled with parsley and coriander.
