1. Cut veggies and spread out in cookie sheet. Drizzle with olive oil and pepper and bake at 350 for at least 30 min. Onion edges should be browning and crispy:)
2. While veggies are roasting, boil water and add quinoa- let simmer 10 min and fluff with fork.
3. Mix quinoa with a hearty helping of veggies- serve with crumbled cheese and drizzled balsamic vinegar for a tasty topping!
