Balsamic Quinoa and Roasted Veggies

Ingredients

  • 1 eggplant, cubed
  • 1-2 orange bell pepper, sliced or wedged
  • 1 green squash (zucchini) sliced in half moons
  • 1 yellow squash sliced in half moons
  • 1 red onion, cut in wedges
  • 1.5-2 cups pre rinsed quinoa
  • Water ( use a 1-2 ratio quinoa to water)
  • Olive oil
  • Pepper to taste
  • Add ins:
  • Balsamic vinegar
  • Feta or goat cheese

Directions

  1. 1. Cut veggies and spread out in cookie sheet. Drizzle with olive oil and pepper and bake at 350 for at least 30 min. Onion edges should be browning and crispy:)
  2. 2. While veggies are roasting, boil water and add quinoa- let simmer 10 min and fluff with fork.
  3. 3. Mix quinoa with a hearty helping of veggies- serve with crumbled cheese and drizzled balsamic vinegar for a tasty topping!
