Banana Bread

Ingredients

  • Banana Bread
  • Makes 2 loaves
  • 3 1/4 cup all purpose flour
  • 2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 4 eggs at room temperature ( 30 min )
  • 2 1/3 cups sugar
  • 1 cup vegetable oil
  • 3 cups ( approx 6. ) very ripe bananas coarsely mashed
  • 1/4 cup cream
  • 2 tsp vanilla
  • * optional 1 1/3 cups toasted and chopped walnuts
  • 1. Preheat oven to 325 degrees
  • 2. Butter or spray 2 metal loaf pans, dust with flour . Bang off extra flour.
  • 3. Sift together flour, baking soda, cinnamon and salt into large bowl.
  • 4. Beat eggs and sugar in mixer ( or by hand ) at med high speed x 10 min til light in colour thick and makes a ribbon when beater lifted.
  • 5. Reduce speed to low. Slowly add oil , bananas, cream and vanilla.
  • 6. Gently fold in flour mixture .
  • 7. Bake in middle rack 1- 1 1/4 hours or 1 hour 10 min convection
  • 8. Cool x 10 min , then turn out . Place right side up and cool completely.
