Banana Bread

Ingredients

  • 1-3/4 cups flour
  • 1-1/4 tsp. baking powder
  • 1/2 tsp. baking soda
  • 3/4 tsp. salt
  • 2/3 cup sugar
  • 1/3 cup shortening
  • 2 eggs
  • 2 Tbsp. milk
  • 3 mashed ripe bananas

Directions

  1. Stir together flour, baking powder, baking soda and salt. Set aside.
  2. In mixer bowl, beat sugar and shortening until light, scraping sides of bowl often.
  3. Add eggs, one at a time, and milk. Beat after each addition until smooth.
  4. Add flour mixture and banana alternately to creamed mixture.
  5. Pour batter into lightly greased 8x4x2-inch loaf pan.
  6. Bake at 350 for 60-65 minutes or until wooden pick inserted near center comes out clean.
  7. Let cool for at least 10 minutes before removing from pan to finish cooling.
