Banana Chocolate Chunk Blondies

Ingredients

  • 1 ripe banana
  • 2 eggs
  • 60 ml melted coconut oil
  • 120 ml pure maple syrup
  • 60 ml Greek yogurt
  • 1 tsp vanilla extract
  • 100 g almond flour
  • 100 g oat flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 90 g chocolate chips
  • 1 extra banana, sliced into rounds
  • Light brown sugar, for sprinkling

Directions

  1. Preheat oven to 350°F (175°C). Line an 8x8-inch baking dish with parchment paper.
  2. Mash the ripe banana in a large bowl. Whisk in the eggs, melted coconut oil, maple syrup, Greek yogurt, and vanilla until smooth.
  3. Add almond flour, oat flour, baking powder, and salt. Stir until just combined. Fold in the chocolate chips and chunks.
  4. Arrange the banana slices in a single layer on the bottom of the pan. Sprinkle lightly with brown sugar to caramelize.
  5. Spread the batter evenly over the bananas. Smooth the top.
  6. Bake for 30 to 35 minutes, until the top is golden and the center is set.
  7. Cool for 10 to 15 minutes, then flip the whole thing upside down onto a board or plate to reveal the caramelized banana layer.
  8. Slice, serve warm, and try not to eat the whole pan.
