- 1/2 cup cooked brown rice
- 1/2 cup cooked kidney beans
- 1/2 cup bell peppers, diced
- 1 spring onion
- 1 tablespoon balsamic dressing
- 1 ounce shredded parmesan cheese
Directions
Top rice with beans, vegetables, cheese and salsa.
Garnish with coriander, if desired.
