Beef and Prune Hotpot (base for Pie)

Ingredients

  • 2T oil
  • 1 onion, chopped
  • 2 cloves of garlic, crushed
  • 2 kg chuck, trimmed and cubed
  • 2 carrots, chopped
  • 2 parsnips, chopped
  • 2t paprika
  • 1/2 cup red wine
  • 1 1/2 cups beef stock
  • 3/4 cup prunes, chopped
  • 2-3T plain flour if needed for thickening

Directions

  1. Heat oil. Cook onion and garlic1-2 minutes until soft.
  2. Add meat in 2 batches, cook for 3-4 minutes until browned.
  3. Add carrots, parsnips, paprika wine and stock. Stir until combined.
  4. Bring to boil, reduce heat and simmer covered for 1 hour.
  5. Add prunes and flour (mixed with a little water) and continue cooking for 45min - 1h or until meat is tender.
