Beef & Beer Casserole

Ingredients

  • Oil for frying
  • 750g gravy beef, 3cm cubes
  • 1 x leek, washed halved and sliced
  • 2 x garlic cloves, crushed
  • 4x rashers bacon, sliced
  • 200g mushroom, sliced
  • 2 Tbsp plain flour
  • 2 x large potatoes, skin on and large cubes
  • 2 x dried bay leaves
  • 4 sprigs fresh thyme
  • 375ml lager beer
  • 1& 1/2 cup beef stock

Directions

  1. Preheat oven to 180*C.
  2. Fry beef in batches until you get some good colour and set aside.
  3. Add a little more oil and fry leek, bacon, mushrooms and garlic for around 5 minutes or until onion has softened.
  4. Return the beef to pan with flour. Cook for 1 minute and add potatoes, thyme and bay leaves.
  5. Stir in beer and stock, pour into a large casserole dish- cover and bake for 2 hours.
  6. Remove thyme and bay leaves, serve with mash and/or crusty bread.
