Beef & Black Bean Chilli

Ingredients

  • 5ml olive oil
  • 110g minced meat
  • 55g carrot, grated
  • 51g zucchini, diced
  • 44g red onion, diced
  • 2g garlic, crushed
  • 0.25 tsp ground cumin
  • 0.25 tsp allspice
  • 1 pinch dried paprika
  • 1 pinch cayenne pepper
  • 63g black beans, canned
  • 125g tomato passata
  • 40g water
  • 44g baby spinach

Directions

  1. Heat oil in a non-stick frying pan over medium high heat.
  2. Add beef mince and cook, stirring and breaking up any lumps, for 2-3 minutes or until the mince has browned. Add carrot, zucchini, onion and garlic and cook for 3-4 minutes. Add the spices, black beans, tomato passata, water and cook for a further 4-5 minutes or until the beef is cooked through and the sauce has thickened. Season to taste.
  3. Serve chilli on a bed of spinach.
