Berry Smoothie Parfait + Quick Stovetop Granola

Ingredients

  • 1 cup strawberries
  • 1 cup raspberries
  • ½ cup blueberries
  • + more berries to garnish
  • 1 tbsp flax seeds
  • 2 dates, pitted
  • ½ cup almond milk (or other plant-based milk)
  • A few spoonfuls unsweetened yogurt
  • 1½ cup rolled oats (gluten-free if desired)
  • 2 tsp cinnamon
  • ¼ tsp fine grain sea salt
  • 1 tbsp coconut oil
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • ⅓ cup pecans, chopped
  • ¼ cup shredded coconut (or coconut flakes)
