Billberry Marzipan Tarts

Ingredients

  • Shortcrust pastry:
  • 1 1/2 tblsp softened butter
  • 11/4 cups all purpose flour
  • 8 bsp butter
  • ¼ cup sugar
  • 1 pinch of salt
  • 1 egg yolk
  • baking paper
  • 1 cup uncooked baking beans
  • Marzipan cream:
  • 1/2 cup ml milk
  • 1/2 ml heavy cream
  • 2 sheets of gelatine
  • 200 g / 7 oz. Niederegger white marzipan loaf
  • 1 sachet bourbon vanilla sugar
  • For the topping:
  • 250 g / 8.8 oz / I ¼ cup frozen bilberries
  • 1 cup blackcurrant juice
  • 2 1/2 tblsp sugar
  • 1 sachet cake glaze (Dr. Oetker)
