Black Bean Salad

Ingredients

  • 2 cans black beans, rinsed and drained
  • 2 red capsicums, diced
  • 3 cobs corn, kernels removed
  • 2T minced shallots
  • 2T crushed garlic
  • 2t salt
  • 1/4 t cayenne pepper
  • 9T olive oil
  • 1/4 c chopped coriander (1-2 T for garnish)
  • 2T sugar
  • 2t lime zest
  • 6T lime juice
  • 2 Avocados diced

Directions

  1. Mix everything together except avocado. Chill for a couple of hours or overnight. Before serving, gently fold through the avocado and garnish with extra coriander. Serve at room temperature.
