Ingredients

  • 1 lg onion
  • 3 cloves garlic
  • 3 cans black beans
  • 2 cups veg stock
  • Cumin
  • Chili powder
  • Smoked paprika
  • Salt and pepper
  • (Optional jalapeños or green chiles)

Directions

  1. Sauté onions until soft, add garlic and cook another minute or so. (If adding jalapeños or chiles do so at this time.) Add spices to develop flavor. Add in the beans and stock and bring to a boil. Summer and cook for about and hour or two until soup thickens. Purée, taste, season and serve!
