Blue Berry Cheese Cake

Ingredients

  • • 1/2 cup cashews soaked in water for an hour.
  • • 1 tbsp fresh lemon juice
  • • 1/2 cup coconut milk
  • • 1/4 cup dates paste for making cheese
  • • 1/4 cup dried blue berries
  • • 1/3 cup deseeded dates
  • • 1/2 cup raw almonds
  • *Variation*
  • Instead of blueberries you can use cranberries, raspberries, mulberry, jamun, mango or strawberries.

Directions

  1. 1. Place the deseeded dates and almonds in a blender to get a sticky dough.
  2. 2. Spread the mixture into 2 small jars and press it evenly arrange.
  3. 3. Drain the cashews and place in a blender along with lemon juice, coconut milk and dates paste. Blend until it is a smooth cream.
  4. 4. Pour half the mixture in the jar on top of the crust and spread evenly.
  5. 5. Place the blue berries in the blender with the remaining mixture and blend again to make a smooth paste.
  6. 6. Top the cheese cake with this mixture.
  7. 7. Cover & refrigerate for 15 - 20 minutes.
  8. 8. Garnish with 3 blue berries & a sprig of mint leaf.
