Blueberry Crumb Cake

Ingredients

  • CAKE:
  • 2C flour
  • 1 1/2C sugar
  • 2t baking powder
  • 1t salt
  • 1stick plus 2T butter
  • 1C milk
  • 2eggs
  • 1C blueberries. (I use 2 cups)
  • TOPPING:
  • 1/2C sugar
  • 1T cinnamon
  • 1/2 stick butter
  • 1/2 C flour

Directions

  1. Cake: Cream together sugar and butter, add eggs and beat. Combine flour , baking powder and salt. Add to creamed sugar mixture alternately with milk. Mix for 2 mins. Fold in blueberries. Pour batter into greased and floured 9x13" cake pan.

Crumb topping:

  1. Add sugar, flour and cinnamon and combine. Slice cold butter and add. Take two knives or a pastry cutter and cut until mixture becomes crumbly. Sprinkle crumb topping evenly over batter.
  2. Bake at 350 for 40-50 mins.
