Boiled Pineapple Fruit Cake

Ingredients

  • 450g tin crushed pineapple
  • 125g margarine
  • 375g mixed fruit
  • 1C brown sugar
  • 1t mixed spice
  • 1t bi-carb soda
  • Pinch of salt
  • 1C SR Flour
  • 1C Plain Flour
  • 2 beaten eggs

Directions

Boil first 7 ingredients in saucepan for 10 minutes. Allow to cool. Add sifted flour and eggs. Place mixture in a lined tin. Cook 1h at 160 degrees. Leave I tin for 5 minutes until turning onto a rack to cool.
