Brown Sugar Seafoam

Ingredients

  • 2 cups brown sugar
  • 1/4 cup corn syrup
  • 1 cup water
  • 1 egg white
  • vanilla
  • finely chopped pecans

Directions

  1. Boil the water, corn syrup and sugar together until a cracking sound is heard when a little is dropped in cold water.
  2. Pour slowly onto the beaten egg white beating constantly and continue to beat until it holds its shape.
  3. Add nuts and vanilla just before it seems to be getting firm.
  4. Put out on wax paper by teaspoon.
