Buckwheat Pancakes

Ingredients

  • 3/4 cup buckwheat flour
  • 1/4 cup sugar
  • 1/4 tsp ground nutmeg
  • 1/2 tsp baking powder
  • 3 tbsp low fat milk
  • 1 egg yolk
  • 3 egg whites
  • Olive oil spray

Directions

  1. Combine flour, sugar, nutmeg and baking powder in a large mixing bowl. Add milk and egg yolk and mix thoroughly.
  2. Whisk egg whites until fluffy and gently fold into the flour mixture, forming a smooth batter.
  3. Heat a frying pan over medium heat and spray lightly with oil. Pour the batter into a jug and pour enough batter into the pan to coat the bottom. Cook until small bubbles form on the surface, then flip over and cook for a further couple of minutes or until golden.
  4. Serve warm topped with fresh or stewed fruits.
