Burger (fish): Crispy Fish Burger

Ingredients

• FISH BURGERS:
• 4 small whitefish fillets (cod or haddock)
• 3 tbsp plain (all purpose) flour
• 2 eggs lightly beaten
• 6oz Panko breadcrumbs
• pinch salt and pepper
• 1/2 tsp paprika
• 2 tbsp vegetable oil
• 4 toasted brioche rolls
• 8 lettuce leaves
• LEMON GARLIC MAYO:
• 1 tbsp mayonnaise
• 1 tbsp of lemon juice
• 1 small clove of minced garlic
• 2 tbsp of chopped chives
