#Calabrian Potatoes

Ingredients

  • 2+ lbs potatoes pealed and thinly sliced
  • 40 grams corn starch or flour
  • 1 Tbsp dried oregano
  • Red pepper flakes (or Calabrian chilies in oil to add later)
  • 1 tsp salt
  • -
  • 12 inch pan
  • Olive oil to cover bottom to 1/4 inch. Add 1 Tbsp Calabrian chili oil also at this time
  • 1 garlic clove halved
  • 1 plate that fits pan

Directions

  1. Mix first group of ingredients
  2. Heat oil to medium
  3. Fry garlic till golden. Remove
  4. Add potato mixture in circular layers. Add chopped Calabrian chilis to second layer
  5. Press potatoes into pan
  6. Reduce heat, cover and cook 30 minutes
  7. Place plate over potatoes and pour oil into container
  8. Flip potatoes onto plate
  9. Pour the oil back into pan
  10. Slide potatoes back and press again
  11. Cook uncovered for 15 minutes or until bottom is browned
  12. Pour off oil as before, flip pan so potatoes are on plate
  13. Add a little parsley if you want
  14. Cut into wedges
