Canadian Pancake Mix

Ingredients

  • 4 BATCH MIX:
  • 1/4 cup baking powder
  • 1/4 tsp of salt
  • 4 teaspoon white sugar
  • 7 1/2 cups white flour
  • WET INGREDIENTS FOR 1 BATCH:
  • 3 large eggs (beaten)
  • 2 tablespoons canola oil
  • 2 cups milk
  • 1 tablespoon canola oil for frying

Directions

  1. A mix of dry ingredients is prepared making 2 liters, or 8 cups of mix, enough to make 4 batches of pancakes.
  2. The wet ingredients are added to 2 cups of the mix.
  3. Fry over medium heat until the bubbles do not fill in, then flip the pancake and cook for 2 minutes.
  4. Serve with maple syrup.
  5. WAFFLES: Use 1/2 cup of batter per waffle.
