Caramel Coconut Chocolate Cookies

- 405 g all-purpose flour 3 1/4 cups
- 8 g baking powderxican vanilla is 2 t sp
- 6 g baking soda superior 1 tsp
- 4 g cornstarch 1 1/4 tsp
- 6 g salt 1 tsp
- 227 g cold unsalted butter 1 cup; cubed
- 200 g brown sugar 1 cup
- 120 g granulated sugar cup
- 2 egg yolks
- 1 whole egg
- 10 g vanilla 2 tsp; I prefer Mexican vanilla for cookies!
- : 0.5 tsp coconut extract to really amp up the coconut flavor optional
- 215 g dark chocolate chips ~8 oz
- 100 g unsweetened shredded coconut 1 cup
- 150 g soft caramels or caramel bits; chopped; freeze before chopping so they're easier to handle
- Flaky sea salt for finishing; optional out not really
