Caribbean Jerk Chicken

Ingredients

  • 4 chicken legs or breasts
  • 1/4 cup olive oil
  • 2 tablespoons brown sugar
  • 2 tablespoons soy sauce
  • 1 envelope Italian salad dressing mix
  • 1 teaspoon dried thyme
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon cayenne pepper

Directions

  1. In a large resealable plastic bag, combine ingredients; add chicken. Seal bag and turn to coat; refrigerate for 2-4 hours.
  2. Coat grill rack with cooking spray before starting the grill. Drain and discard marinade. Grill chicken, covered, over medium heat for 35-45 minutes or until a meat thermometer reads 165 degrees, turning occasionally.
