Casserole: Baked Stuffed Shrimp

Ingredients

  • 1 ½ cups crushed Ritz crackers (or breadcrumbs)
  • 4 tbsp butter, melted
  • 2 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped
  • Juice of 1 lemon
  • 1 tsp Old Bay seasoning (optional)
  • Salt & pepper to taste
  • Extra butter for drizzling

Directions

  1. Preheat oven to 375°F (190°C). Lightly butter a casserole dish.
  2. Arrange shrimp in a single layer in the dish.
  3. In a bowl, mix crackers, melted butter, garlic, parsley, lemon juice, Old Bay, salt & pepper.
  4. Spoon the cracker mixture evenly over the shrimp.
  5. Drizzle extra melted butter over the top (optional but sooo good).
  6. Bake 15-18 minutes until shrimp are pink and topping is golden.
  7. Squeeze fresh lemon over before serving.

Optional Add-ins:

  1. A little white wine splashed in the dish
  2. Grated parmesan in the topping
  3. Chopped scallions mixed in
