In medium saucepan bring butter, milk, onion and seasoning of choice to a low boil. Be careful to not cook milk to hot or to long so it does not curdle. Stir frequently. Dissolve cornstarch in 1 tablespoon water and whisk into milk mixture. Continue to stir vigorously until desired consistency is achieved. When mil mixture is thick enough, add cheese slowly, melting gradually until desired consistency, or cheesiness. Serve over pasta or as a side dish to use at the table.
