Cherry Almond Breakfast Cereal

Ingredients

  • 4 cups rolled oats
  • 1 cup unsweetened coconut flakes
  • 1 cup whole almonds, roasted and salted
  • 1 cup dried tart cherries
  • 2 Tbsp maple syrup
  • 2 tsp vanilla extract
  • 1/2 cup pumpkin seeds, roasted and salted
  • 1 tsp cinnamon
  • 1 tsp ground ginger
  • 1/2 tsp allspice

Directions

  1. Preheat oven to 350*
  2. Spread oats on baking sheet and bake for 11 min. Add coconut flakes after 7 min. Bake until golden brown.
  3. Roughly chop almonds and cherries
  4. Combine maple syrup and vanilla in small bowl. Microwave until warmed through, 20 seconds.
  5. In large bowl, combine oats and coconut, cherries and almonds, pumpkin seeds, spices and maple vanilla mixture. Stir to combine.
  6. Pour mixture back onto baking sheet and allow to fully dry, about 10 minutes.
  7. Stir to break up clumps and transfer to sealable container.
  8. Serve with milk
