Chicken and bacon gnocchi bake

Ingredients

  • 500g gnocchi
  • 1 tbsp olive oil
  • One brown onion, finely diced
  • 150g bacon, sliced
  • 200g button mushrooms, sliced
  • 30g butter
  • One clove garlic, crushed
  • 500ml cream
  • 1 cup cooked chicken, shredded
  • 40g parmesan, grated
  • 1 cup grated cheese

Directions

  1. Preheat oven to 180C. Cook gnocchi according to packet instructions. Drain and set aside.
  2. In a large frypan, heat oil over medium heat.
  3. Cook onion for 3-4 minutes until soft.
  4. Turn up the heat a little and add bacon. Cook, stirring, for a further 2 minutes.
  5. Add the mushrooms and butter and continue to cook for 3 minutes.
  6. Add garlic and cook for 1 minute.
  7. Pour in the cream.
  8. Bring to a boil, then reduce heat and simmer for 5 minutes until reduced slightly.
  9. Add chicken and half of the parmesan. Remove from heat and stir to combine.
  10. Place gnocchi in the base of a medium baking dish.
  11. Pour over the cream mixture.
  12. Stir to combine, then top with grated cheese and remaining parmesan.
  13. Bake for 25-30 minutes until bubbling and golden.
