Chicken and Corn Chowder

Ingredients

  • 1T butter
  • 1 onion, chopped
  • 200g diced bacon
  • 2 sticks celery
  • 450g potatoes, chopped
  • 2 carrots, chopped
  • 1/2 red capsicum
  • 2c chicken stock
  • 420g tin creamed corn
  • 1/2 cup milk or cream
  • 1/2 a cooked chicken (about 420g), chopped

Directions

  1. Melt butter in large saucepan. Cook onion, bacon, celery and capsicum for 2-3 min. Add vegetables and stock and cook for 10 min or until vegetables are tender. Add the other ingredients and heat without boiling, stirring frequently. Season with pepper and parsley/ coriander.
