Chicken and Green Chili Enchiladas

Ingredients

  • 3 chicken breasts
  • 1/2 onion
  • 1 cup sour cream, light
  • 1 can chilies, green
  • 2 cups shredded cheddar cheese
  • 1 can cream on chicken soup
  • 8 corn tortillas
  • 1 can red, mild enchilada sauce
  • 1 can tomato soup
  • 1 can cream of mushroom soup

Directions

  1. Cook and shred chicken.
  2. Cook and stir onion until tender
  3. Stir together chicken, onion, sour cream, green chilis, cheese and cream of chicken soup.
  4. Spoon mixture into tortillas and roll up, seam side down in pan.
  5. Top with enchilada sauce, tomato soup and cream of mushroom soup. Top with cheddar cheese.
  6. Bake at 350 for 25 minutes.
