Ingredients

  • 125g brown rice, heat & serve quick cup
  • 100g chicken breast, lean, baked & shredded
  • 15g avocado, diced
  • 8g mayonnaise, reduced fat
  • 55g carrot, grated
  • 75g tomato, chopped
  • 50g iceberg lettuce, shredded
  • 59g red onion, diced
  • 14g parsley, diced
  • 1g pinch pepper

Directions

  1. Cook rice according to packet instructions. Once rice is cooked, place in a serving bowl.
  2. Mix chicken, avocado and mayonnaise in a bowl, then add to rice bowl.
  3. Add carrot, tomato, lettuce, onion and parsley.
  4. Season to taste and mix well.
